Carrot Salad Sandwiches

Primary Blog/Lunch/Carrot Salad Sandwiches

If your kid struggles with raw veggies, this makes them creamy and satisfyfing, and easy to eat! The finer you shred the carrots, the easier it is to chew. If it looks strange, just try it!  

Ingredients:

  • 1/2 cup Almondaise or another seed oil-free mayonnaise
  • 1 TBSP lemon juice
  • 1 tsp honey
  • 1 tsp mustard
  • 1 tsp dill weed
  • 1/2 tsp salt
  • 1/4 tsp onion powder
  • 5 large carrots, grated
  • 2-3 green onions, finely chopped
  • 1-2 stalks celery, finely tossed
  • Sprouted Grain Bread, buttered and toasted

1. Whisk together Almondaise (in your GermProof Kids Recipe Book!), 1 TBSP lemon juice, 1 tsp honey, 1 tsp mustard, 1/2 tsp salt and 1/4 onion powder in the bottom of a medium mixing bowl. 

​2. Add 5 large grated carrots, 2-3 chopped green onions, 1-2 chopped celery stalks and stir very well. 

3. Spread on buttered, toasted bread and eat open faced, or for little ones, I stuff a dinner roll or hamburger bun with the mixture to make it less messy and easier to eat.
