1. Preheat Air Fryer to 425.
2. Dice up a small butternut squash or part of a large one, about 4 cups. (or cheat a little and buy some already diced!)
3. Put in a large bowl and drizzle with about 2 TBSP olive oil.
4. Dust with onion powder, smoked paprika and salt. (I don't measure, but if you want to, do about 2 tsp of each spice and 1 tsp salt.)
5. Rake a large wooden spoon through the mixture while the bowl is tilted on it's side.
(this is my trick for coating things easily and quickly...see video below!)
6. Spread out on parchment fryer liner and cook, shaking basket occasionally, for about 15-20 minutes. (You can also do these in an oven on a parchment lined cookie sheet. Same temp, stir occasionally while roasting.)
7. Serve with a quality Organic BBQ sauce (I get mine at Trader Joe's...which incidentally has fun crinkle cut butternut squash you can buy.)
